Easy Potato Soup

Ingredients
3 tablespoons of olive oil
1 chopped white onion
Salt and pepper to taste
4 crushed garlic cloves
4 cups of vegetable broth
1 kg potatoes, chopped
1 and a half cups of cooked white beans
1/2 teaspoon of mustard
1 tablespoon of lemon juice
1/2 teaspoon of paprika
Directions
Fry onions in oil until soft.
Add garlic, salt and pepper and stir for 3 minutes.
Add broth, potatoes and beans.
Leave the mixture on the fire until it boils, then reduce the heat and leave for 30 minutes until the potatoes are tender.
Place the mixture in the electric mixer with the mustard, lemon juice and paprika until smooth.
Serve the soup hot.
