Avocado stuffed with chickpeas

Ingredients
3 avocados, cut in half
2 tablespoons of lemon juice
1 cucumber, diced
1 red pepper, diced
1/4 red onion, diced
1/4 teaspoon garlic powder
1 small tomato, diced
4 tablespoons of chickpeas
Salt and pepper to taste
How to prepare
Pour lemon juice over the avocado and spread it well to avoid discoloration. Mix the remaining ingredients well and place them in the core of the avocado. More lemon juice can be added. Garnish with chopped parsley and serve cold.
Note: Quinoa can also be added for added flavor!
