Quinoa Salad a La Mexicana with Lime and Cumin Dressing

Ingredients
The Salad
1 cup of quinoa
2 cups of water
1 red onion, finely chopped
1 cup of boiled red beans
1 cup of corn
2 tablespoons of chopped coriander
1 red chopped pepper
The sauce
¼ cup of lemon juice
¼ cup of olive oil
1 teaspoon of cumin
Salt and pepper to taste
How to prepare
Wash the quinoa and drain it. Boil it in a pot over low heat, wait until the water has completely evaporated. Set aside to cool down.
Add the rest of the salad ingredients to quinoa. Mix the ingredients of the sauce as well then add it on top.
Decorate with coriander and serve cold.
