Vegetable Kebabs with Halloumi

Ingredients

2 zucchinis, chopped

1 red pepper, chopped

500g cherry tomatoes

2 tablespoons of olive oil

Pepper and salt

500g brown rice

¼ cup of lemon juice

200g halloumi cheese, chopped

200g of yogurt

1 teaspoon of tahini

1 clove of garlic, crushed

1 tablespoon of chopped mint

 

How to prepare

Place zucchini, pepper and tomato pieces on the skewers.

Grease them with olive oil, then add pepper and salt.

Grill vegetables until cooked.

Meanwhile, cook the rice, then add the lemon juice and pepper.

Grill halloumi cheese in a pan and wait until it becomes golden brown.

To prepare the sauce, mix yogurt with tahini, garlic, mint with a pinch of salt.

Serve vegetables skewers and halloumi with rice and yogurt sauce.
